SWEET POTATO SOUFFLÉ

 


                              3 cups sweet potatoes
                          3/4 cups sugar
                          2 eggs (beaten)
                          1/2 tsp salt
                          1/2 stick margarine (melted)
                          1/2 cup milk
                          1 1/2 tsp vanilla
                          1 tsp nutmeg


Boil and peel sweet potatoes, then mash them.  Mix all ingredients and pour into baking dish.  Top with large marshmallows and bake at 325 degrees for 25 minutes.
