          CHEESE GRITS

2 cups boiling water

4 eight ounce packages of instant grits

2 eggs, beaten

2 T. milk

red pepper (to taste)

1 cup grated sharp cheddar cheese


Pour grits and cheese into a bowl.  Pour boiling water over the cheese and grits, then stir to mix well.  Add a couple of tablespoons of the grits mixture to the beaten eggs and stir.  Add milk to this, then pour it back into the grits mixture and stir quickly.  Pour into a casserole dish and bake uncovered for 45 minutes.
